Tomato, quinoa and lime salad with chilli olives

This easy to prepare protein-packed salad mixes lovely smoky flavours with hot chillies – don’t say we didn’t warn you.

Method:

  1. Take out the tomatoes from the antipasti mix
  2. Chop the basil leaves
  3. Mix together the quinoa, tomatoes, basil and a handful of olives
  4. Share between two plates
  5. Squeeze over the lime and drizzle with a little of the oil from the antipasti pack
  6. Garnish with a few chillies…as many as you dare!

Tom's top tip: You can always replace the Smoked Tomatoes (in the antipasti mix) with our Slow Roasted Semi-Dried Tomatoes or fresh tomatoes
